Re-creating salad dressings is simple and often times necessary. The ingredients in some salad dressings is a quick way to turn a nutritious salad into quite the opposite. A lot of the time they’re filled with nasty ingredients that are both hard to pronounce and recognize. This is clean, vegan, and delicious alternative to everyone’s favorite salad dressing – Caesar.
Vegan Cashew Caesar Salad Dressing
Made from cashews but taste like the real thing! This is great dairy-free and vegan alternative to everyone's favorite salad.
- 1/2 cup Raw cashews, soaked overnight
- 3/8 cup Water
- 3 tbsp Extra virgin olive oil
- 1.5 tbsp Lemon juice
- 1/2 tbsp Dijon mustard
- 1-2 cloves Garlic (to taste)
- 1 tbsp Worcestershire sauce
- 2 tsp Capers
- 1-2 pinch Salt & pepper (to taste)
Soak 1/2 cup raw cashews in water overnight in the fridge.
Next day, drain and rinse cashews.
Put all ingredients into a food processor or high-powered blender and blend on high for 2-3 minutes. Add more water if the dressing is too thick.
Serve over your favorite greens
