A perfect light, refreshing salad with a homemade balsamic dressing and grilled chicken. Feel free to swap out protein for salmon, or nothing at all! The salad dressing I use for this my simple balsamic vinaigrette – 3 parts olive oil, 1 part balsamic vinegar, and 1 part dijon mustard – whip until completely mixed and has a thicker consistency.
Raw Zoodle Balsamic Salad
- 1 large zucchini
- 1 handful halved cherry tomatoes
- red onion
- 1/3 cup chopped cilantro
- 1/2 avocado
- 1 small grilled chicken breast
Preheat grill or pan for grilled chicken. Season both sides with salt, pepper, & garlic powder. Grill chicken on each side for 7-8 minutes or until cooked thoroughly.
While chicken is cooking, spiralize zucchini and place in bowl.
Half the cherry tomatoes, chop red onion and cilantro and place on top of zucchini.
Half the avocado and slice and place on top of salad.
Take chicken off the grill and let cool for 10 minutes. Slice or chop and place on salad.
Drizzle salad dressing on top. Enjoy!
