Loaded Superfood Salad

I very often hear “I don’t like salads. They’re boring and I’m always hungry after.” This is usually due to the lack of nutrients in the salad that most make. When most people think of a salad, they think romaine lettuce, shredded cheese, and some Ranch dressing, maybe French if they’re feelin’ fancy. They’re right, that salad is boring and they will be hungry in an hour. There aren’t many nutrients in those foods that will keep someone satisfied and full for an extended period of time. My superfood salad is a go-to for me. I make it for lunch at least 3 times a week. It’s fresh, delicious, and because of the food items I put into it, it keeps me incredibly full for hours, not to mention the added health benefits from foods like sauerkraut, nutritional yeast, and blueberries. Loaded Superfood Salad

  • 3 cups preferred nutritious green spinach, kale, arugula, etc.
  • 1/2 cup cilantro
  • 1/2 cup cherry tomatoes
  • 1/4 cup red onion
  • 1/4 cup blueberries
  • 1/4 cup sunflower seeds
  • 1/4 cup pumpkin seeds
  • 1/4 cup sauerkraut
  • 1 tbsp nutritional yeast
  • 1 pinch cracked pepper and sea salt
