Don’t get me wrong, I love pizza. But when I wake up in the mornings after eating a REAL pizza (not cauliflower crust pizza), I feel extremely bloated, sluggish and swollen from being over-served in the sodium department. I love this cauliflower crust vegan rainbow pizza. It tastes light, it tastes fresh, and it doesn’t make me feel like crap after eating it! Give this a try next time you’re finding yourself craving pizza. It’s a nice switch up.
Vegan Rainbow Pizza
Using cauliflower crust instead of regular crust - this makes for a lighter version of the most beloved food. I used vegan cheese on this one, but feel free to swap out for dairy cheese. In this recipe I also choose to make my own tomato sauce. I find that in stores, jarred tomato sauces tend to sneak in a lot of extra sugars that are completely unneeded. Making a large batch of your own tomato sauce (freezing the extras) is a great way to ensure that you're not taking in a lot of extra sugars.
- 1 crust cauliflower pizza crust
- 1/2 cup homemade tomato sauce
- 3/4 cup choice of cheese
- 3/4 cup cherry tomatoes
- 1/2 cup red peppers
- 3/4 cup orange pepper
- 1/2 cup yellow squash
- 1/4 cup broccoli
- 1/4 cup red onion
Pre-heat oven to 450.
Chop all veggies for the toppings and place on sheet pan to roast in the oven until slightly charred. Drizzle olive oil and salt and pepper to taste.
Add tomato sauce and Daiya cheese to the frozen cauliflower crust.
Place crust in over under veggies for about 10 minutes, or until crust is slightly browned on the outsides and cheese is melted.
Once veggies are slightly charred, take them out of the over and place on pizza in any which way, I chose to do a rainbow ring for this one.
Cut to your liking, and serve! Enjoy with a fresh side salad.
You can add whatever veggies you'd like to this recipe. You can also opt for regular dairy cheese as well, if Vegan cheese isn't your thing!
