Chicken Tortilla Soup

This is one of my favorite soup recipes for a cold or rainy day. It freezes really well so I always make a big crock pot full so I have leftovers to freeze to get me through those winter months. Feel free to play around and add your personal favorite vegetables to this soup! This is just my go-to. Enjoy!

Chicken Tortilla Soup

My favorite soup for a cold or rainy day! Feel free to make it your own with your desired vegetables, or what's currently in season. Enjoy!

  • 4 cup Low sodium chicken broth
  • 2 Chicken breasts
  • 3 Chicken thighs
  • 1 28oz can Crushed tomatoes
  • 2 14.5oz can Diced tomatoes - fire roasted
  • 1 Large White onion
  • 2 Red bell peppers
  • 2 Zucchini
  • 1 package Frozen corn
  • 1 can Black beans
  • 1/2 tbsp Cumin
  • 1/2 tbsp Chili powder
  • 1 tsp Paprika
  • 1/4 tsp Cayenne
  • 2 clove Fresh garlic
  • 2 4oz can Green chiles
  • 1 small jar Verde salsa
  • Salt - to taste
  • Pepper - to taste


  1. Add chicken broth, crushed and diced tomatoes, chicken breasts and thighs, and all spices to a crock pot. Stir to mix the spices.

  2. Set crock pot to low for 2 hours. Dice onion, bell peppers, and zucchinis - set aside. 

  3. After 2 hours, add the onion, bell peppers, and zucchini, black beans, and corn. 

  4. Cook on low for another 1.5 hours.

  5. Take out the chicken, shred it, and place back into the crock pot. Set crock pot to "warm" or "simmer" for another 1/2 - 1 hour. 

  6. Serve and enjoy! 

Recipe Notes

I top my soup with Siggi's plain Greek yogurt (instead of sour cream), cilantro, and avocado.
