Banana & Oat Collagen Pancakes

I very rarely have a sweet tooth for breakfast, but when I do, you can find me making these banana, oat, & collagen (I use Vital Proteins) and Siggi’s Yogurt pancakes. They are so delicious and filling and there’s no added or artificial sugars, all naturally sweet from the bananas and maple syrup!

Banana & Oat Pancakes

One of my favorite breakfasts for when I'm craving something sweet! Filled with clean ingredients and no added sugars, this will keep you satisfied until lunch time.

  • 1.5 ripe banana 1 for Pancake mix, 1/2 for toppings
  • 1 egg
  • 1/2 cup rolled oats
  • 1 tsp cinnamon
  • 1/2 scoop Vital Proteins collagen powder
  • 1 tsp coconut oil
  • 1 small container Siggi's 'no sugar added' banana and cinnamon yogurt
  • 1 handful blueberries - fresh or frozen
  • 1 tbsp pure maple syrup


  1. Mash the banana in a large bowl. 

  2. Add the egg, oats, collagen, and cinnamon and mix until combined. 

  3. Heat a frying pan with coconut oil and scoop 1/2c of mixture into pan. 

  4. Fry until bottom of pancake is golden brown, flip to complete the other side. 

  5. Place on a plate and spread Siggi's 'no added sugar' yogurt on top of the first pancake. Repeat steps 3-5 for second pancake. 

  6. Add toppings. Bananas, blueberries, cinnamon, coconut, and pure maple syrup.
